Perfect Coconut Cake
Simply put, this is my favorite cake.
Cake Ingredients:
2 1/2 sticks butter, at room temperature
6 tablespoons creamed coconut, at room temperature
1 1/2 cups superfine sugar
5 eggs
2 cups cake flour
1 cup shredded coconut
Frosting Ingredients:
2 8-oz. packages cream cheese at room temperature
1 cup powdered sugar
1/4 cup shredded coconut
